Abstract
The detection of short chain aldehydes and other carbonyl compounds formed during the Maillard reaction poses a difficult challenge due to their high reactivity and volatility. Cysteamine (2-aminoethanethiol) was used to derivatize these carbonyl containing compounds in a model system of glucose/lysine to form stable thiazolidine compounds. The thiazolidine derivatives along with the other heterocyclic flavor compounds generated were isolated by high vacuum distillation and identified by GC/MS.
