Abstract

An investigation of Salvia officinalis L. has led to the isolation of three new phenolic glycosides, 6-O-caffeoyl-β-D-fructofuranosyl-(2→1)-α- D-glucopyranoside (1), 1-O-caffeoyl-β-D-apiofuranosyl-(1→6)-α-D- glucopyranoside (2), and 1-O-p-hydroxybenzoyl-β-D-apiofuranosyl-(1→6)-β- D-glucopyranoside (3). Elucidation of the structures of 1-3 was based on the interpretation of FABMS and 1D and 2D NMR spectra. Compounds 1 and 2 were found to be moderately active as antioxidants in the DPPH test and metmyoglobin test.
