Abstract

Six glycosidically bound C13 norisoprenoids were found in fresh tomato fruit extract. They were isolated by Amberlite XAD-2 adsorption and methanol elution followed by enzyme hydrolysis using β-glucosidase. Their role as possible flavor precursors in tomato is discussed.
