Abstract

(-)-Epigallocatechin gallate (EGCG) and (-) epigallocatechin (EGC) are two main antioxidative catechins of green tea. The specific mechanisms of antioxidant action of tea catechins remain unclear. In this study, the scavenging mechanisms of EGC and EGCG on three different oxidants are evaluated by the identification of reaction products. Although the principal site of antioxidant reactions on an EGC or an EGCG molecule is the trihydroxyphenyl B ring, this study indicates that the A ring of catechins may also serve as an antioxidant site.
